Let’s just say that if we had to pick our favorite Peekaboo Ice Cream flavor (all of them –– *wink wink*), it would definitely be the chocolate with hidden cauliflower. Why? As major chocoholics, we will take any chance that we can to indulge in the sweet stuff. Not only is Peekaboo Chocolate Ice Cream rich and flavorful, but it has a comfort that only chocolate lovers would understand.
National Chocolate Day may seem like just another one of those ‘days’ to anyone else, but we take it pretty seriously (and for good reason). We love any excuse to celebrate, especially if that excuse is sweet, dark, creamy, and goes by the name chocolate. After all, why wouldn’t we be excited to observe such a delicious holiday? While there are many specific chocolate related holidays throughout the year, National Chocolate Day celebrates all things chocolate.
The History of Chocolate
Chocolate dates back to 450 BC when the use of cacao seeds appears to be first documented as a fermented beverage (hot chocolate, anyone?). The story goes that the Aztecs in Mesoamerica believed the seeds were a gift, using them for currency and preparing them only as a drink, mixed with spices or a corn puree. When chocolate was brought to Europe in the sixteenth century, sugar was added to sweeten the taste and chocolate (as we know it) was born. Hallelujah!
How Chocolate Is Made
Cacao tree seeds have an intense, bitter taste that must be fermented to develop the flavor. To make the chocolate that we know and love, the seeds have to be fermented and then dried, cleaned and roasted. After roasting, the shell is removed to produce cacao nibs. The cacao nibs are then ground into cocoa mass, which is pure chocolate in rough form.
As choco-holics, we don’t discriminate –– we’ll savor every sweet bite of the cacao nibs, puree, or the beans themselves. All jokes aside, raw cacao is a major super food with over 300 identifiable vitamins, minerals, and amino acids (!!!). If you know anything about Peekaboo, you’ll know there’s nothing that we love more than a nutritious superfood that can be used to make an indulgent and delicious treat (*cough* with hidden veggies *cough*).
Typically, cocoa nibs are liquefied and combined with other ingredients to make many types of chocolate products from cocoa butter, sweet chocolate, milk chocolate, white chocolate and more. These days, chocolate variations are ever expanding, but one thing is for sure, our favorite style is a massive chocolate ice cream sundae!
How We’re Celebrating Chocolate
There are so many ways to celebrate National Chocolate Day but for us, it’s all about indulging in a delicious chocolate ice cream! One of our first Peekaboo Ice Cream flavors is our Chocolate with Hidden Cauliflower, made from a delicious combination of rich, dark chocolate ice cream with cauliflower you can’t see or taste. The benefits? The hidden cauliflower packs our chocolate ice cream with loads of vitamins and minerals including vitamin A, vitamin C, and manganese, which are all vital to your systems.

Death by Chocolate Ice Cream Cake
- 1 box chocolate cake mix (plus ingredients called for on the back of the box)
- 1 container of Peekaboo Chocolate Ice Cream with Hidden Cauliflower
- 1 container of Peekaboo Vanilla Ice Cream with Hidden Zucchini
- 2 c. chocolate chips
- Chocolate Fudge
- Chocolate sprinkles, for fun
Seven steps to chocolate heaven!
1. Make cake according to box directions.
2. Divide cake batter in two pans until done. Let cake cool completely.
3. Top one cake with vanilla ice cream and the other with chocolate ice cream.
4. Place a layer of chocolate fudge on the top of the ice cream layer and then assemble so the layers are cake, ice cream, fudge, ice cream, cake.
5. Freeze cake until ice cream has hardened, about 2 hours.
6. Remove cake from the freezer and top with chocolate frosting and sprinkles.
7. Serve Immediately and enjoy!
